1.5 cups lentils
1/2 onion
1 red bell pepper
1 cups diced carrot
1 tablespoon minced garlic
1 can chickpeas
1 can corn
8 cups stock (I used chicken but vegetable is a good vegetarian/vegan option)
curry powder
salt
pepper
dill
1. wash and soak lentils
2. prep the veg. dice it all
3. sauté onion until it becomes translucent then add garlic. continue until fragrant
4. add the stock and seasonings to taste. bring to a boil
5. add the everything else. cook until everything is soft (check the carrots for this)
6. bingo bango you're done. top with some kind of creamy something like creme fraiche or coconut milk
